Roasted carrots potatoes and onions

* Ingredients :

° 2 carrot pounds

° 6 whole potatoes

° 1 sweet onion

° Three cloves of garlic

° 6 tablespoons of olive oil

° ½ teaspoon dried thyme

° ½ teaspoon dried parsley

° salt and pepper to taste

* Prepare :

 Preheat oven to 475 degrees Fahrenheit.

Peel the carrots, cut them into small pieces.

Cut the potatoes into small pieces, leaving the skin on. Cut the onion into eighths. Chop the garlic.

Blended carrots, potatoes, and onions in bowl. Drizzle olive oil over the vegetables, add garlic, thyme, parsley, salt (to taste), and pepper (to taste).

Toss until vegetables are covered with olive oil and spices. Placing on a cookie sheet in a single layer & covering with foil.

Roast for forty-five minutes.

Remove the aluminum foil and continue to roast for another half hour or until golden brown, stirring every 10 minutes.
